The butcher cleans up a "poulet" for us. They come with the heads and feet attached in case you want to do some kind of wierd French thing with them. We opted for removal "a-la-preparation". We will attempt the beer-in-the-butt bbq chicken recipe, which I guess you could say is some kind of wierd American thing to do to a chicken!
